WEEK #45 NOVEMBER 3rd-9th, 2025

Dear Customers,

             These last two months of every year are absolutely jam-packed with reasons to eat!  With Thanksgiving and Christmas being the two main causes, you also can count on parties, get-togethers, school events and workplace celebrations.  Thanksgiving is very late this year, falling on the 27th of November.  The earliest Thanksgiving can occur is November 22nd with the latest being the 28th!

            Nothing can warm up my insides on a cold, gray day like a cozy kitchen.  Nothing perhaps except the delicious aromas associated with a busy oven.  Bread baking, desserts bubbling or even a pot roast simmering amidst a pan of root vegetables makes my mouth water just thinking about it. 

            Our family simply loves casseroles.  The meaning of the word stems from the large, deep pan or dish used for cooking these scrumptious creations. As casseroles cook, and these can be simple “dump-and-mix” dishes, their ingredients meld, melt and bake into delicious meals!  Meats, vegetables, cheeses, sauces and pasta are combined in countless combinations to make something hot, wholesome and filling!  Hence our love affair with them!

            Here’s a delicious example of what I was just referring to:

EASY CHICKEN BUBBLE BAKE

2 – 10½ oz cream of chicken soup 1 cup milk
½ tsp dried thyme ½ tsp salt
¼ tsp black pepper 1-16oz pkg frozen mixed veggies
3 cups shredded cooked chicken 1-12oz can refrigerated biscuits
2 tbs melted butter  

            Preheat oven to 375°F.  Coat a 9×13 baking dish with cooking spray.  In a large bowl combine soup, milk, thyme, salt & pepper and mix well.  Stir in the vegetables and chicken and add to the baking dish. 

            Bake for 15 minutes, then remove from the oven.  In another bowl, combine the biscuits & butter and arrange over chicken mixture.  Bake another 15-18 minutes or until biscuits are golden brown and casserole is bubbly!  Mmmmm!
