WEEK #40 October 5th, 2026
Dear Customers,
The month of October is at hand for the next four full weeks. During that span, we will most likely experience some warm days and cooler nights. Of course it could also be cold and rainy! October is a transition month and the weather reflects that. We’ll probably be raking leaves at some point, possibly several times. By the time Halloween rolls around at the end of the month, our gorgeous maple trees will take on the appearance of skeletons and even the oak trees will be reduced to brown, crispy remnants of their former glory.
With all the talk of keeping Daylight Savings time year-round, nothing different is scheduled to happen this year in 2026. We’ll still turn the clocks back on November 1st unless Congress acts before then! Personally, I don’t see any advantage going to full-time Daylight Savings. Any daylight we may pick up in the evening will be lost in the morning.
Keeping with the theme of October as National Apple Month, it’s only fitting to share another apple-based recipe this week. Maybe you love apples, but you don’t feel like peeling, coring and otherwise going through all the tedious preparation necessary for an apple pie, an apple cake or even apple crisp. This simple recipe is the one for you then.
BAKED APPLES
| ½ CUP + 2 TBS WHOLE ROLLED OATS | ½ CUP ALMOND FLOUR |
| 1/3 CUP BROWN SUGAR | ¼ CUP CRUSHED NUTS |
| ½ TSP APPLE PIE SPICE or CINNAMON | ¼ TSP SEA SALT |
| ¼ CUP FIRM COCONUT OIL | 4 APPLES CORED & HALVED |
| MELTED COCONUT OIL for DRIZZLING | VANILLA ICE CREAM for SERVING! |
- Preheat the oven to 375°F.
- TOPPING: In a small bowl, combine the oats, almond flour, brown sugar, nuts, apple pie spice, and salt. Use your hands to work in the firm coconut oil until the mixture crumbles. If the mixture is too dry, add a few drizzles of water until the mixture starts to stick together when pinched.
- Use a spoon to scoop out a bit of the center of each apple half. Place in an un-greased baking dish large enough to hold the apples. Drizzle with melted coconut oil and rub it all over the apples. Cover with foil and bake for 10 minutes. Uncover and top each half with generous spoonfuls of the topping. Drizzle a little more coconut oil on top and bake for 20 minutes, or until the apples have softened and the topping is crisp.
- Let cool slightly and serve with vanilla ice cream!
APPLE TIPS:
- The more topping the better!
- Be generous with the coconut oil which ensures the apples become soft and juicy in the oven – get it on all sides of the fruit
- Always cover and bake the apples for ten minutes without the topping, but once you add it, the time will vary. Larger apples take a little longer!
- Firm apples like Honeycrisp, Pink Lady and Gala work best!
